Does anyone know any means to export the interactive summary tables/charts created by the Data Explorer node?

For the histograms, you could use the older Statistics node, which provides the same information. In its options, you can force the histograms to PNG format, which can then be written to your file system using a Image Writer (Table) node.
Does that get you any closer?
