I new to Knime and I am trying to convert multiple PDF files to excel. Is this possible in Knime nothing I have tried based on my very limited experience has worked. The files are not in the same structure also.

There was a recent workflow on the KNIME hub that deals with importing PDF. Question is if you want to import text or tables or something.
In general if you want to import tables from Excel there is:

I have not yet tried to use it in KNIME and no idea if it could be used in batch mode.

The Tika Parser node may help here as well, but as @mlauber71 mentioned, it’s going to depend on how the files themselves are formatted, and what you’re trying to do with the data.
