There are currently no I18N string bundles for the displayed text in KNIME, so there is no practical way for you to do this translation.

Whether there are somebody try to build KNIME from source code , extract all the text from code and do the translation?

The parts of KNIME that have source code available to the public ( https://github.com/knime ) could undergo that. It seems like it may become unpleasant to attempt to maintain it (i.e as updates to the source code are released, attempting to merge them back in to your custom code case.)
