If I try to read a file that is in the server using Mountpoint->LOCAL I get a LOCAL is not connected error message. Is it incorrect to to use that type of path?

You are correct that LOCAL is not the correct mountpoint to use if you want to access files on a KNIME Server instance. Instead, please try switching the mountpoint to the KNIME Server instance you are deploying to. You will need to be authenticated with the server in KNIME Analytics Platform in order to select it in the dropdown menu.
